Home made energy balls - gluten, dairy, and refined-sugar free. These are delicious, quick to make, and much healthier (and cheaper) than the energy bars you can buy in the supermarkets. They're also very addictive - you have been warned! 1 cup dates, pitted, soaked until soft, and chopped 4 Tbsp almond butter 1/2 cup mixed seeds ( pumpkin and/or sunflower seeds work well) 1⁄4 cup almonds 1⁄4 cup shredded coconut 1-2 Tbsp coconut oil 1⁄2 tsp cinnamon 1 tsp grated lemon or orange zest Pinch of sea salt 1 tbsp raw cacao powder Chop the dates, nuts and seeds finely or use a food processor. Melt the coconut oil in a small pan, and infuse with the cinnamon and lemon zest. Add the oil to the dates and nuts, along with the almond butter, salt, and coconut, and blend to form a paste. Roll into small balls and use extra coconut to coat the outside and prevent from sticking. Store in the refrigerator and enjoy! Comments are closed.
